Shakshuka


Hey! I've been to talk about this book for a while - I've recently bought a couple healthy food cookbooks (for work but also from interest)! I need to start cooking more healthy foods that don't take forever and are packed with flavour. Clean Eating Alice seemed like an obvious choice in books as she's a well-known fitness blogger who regularly talks meals and prep! The meal I created recently (and LOVE) is her Shakshuka! Easy, fast, simple ingredients, delicious, easy to prepare and have the next day, and easy to make in bulk - it's ideal! I made a couple of alterations from choice, but here's what you'll need:

Coconut oil (for oiling the pan)

1x aubergine

Mushrooms

Garlic 1x tin tomatoes

Paprika (to taste) Salt & pepper (to taste)

Eggs

...and I added bacon and boiled potatoes, but didn't add cheese (she recommends Mozzarella but feta is delicious with it too)! If I'd had peppers I'd have added them too!

So get started by prepping your veg; I cute nice, big chunks of aubergine up (I love aubergine) and little button mushrooms...

Stick it all in the pan with the oil, and add a nice big spoonful of garlic (yum)

Sprinkle with Paprika to flavour

Get frying, and add the bacon and potatoes (cut into little slices)

Once it's cooked through, add the tomatoes!

Let is simmer for a while, then add the eggs - I just added one

Cover the pan to make the egg(s) cook through properly

Aaaaand you're done! Add salt and pepper to taste and you're good to go! This reminds of of ratatouille, another favourite dish of mine, so it's delicious with crusty, buttered bread if you're really hungry and not too concerned about your waistline! I ate half of this fresh and put the other half in the fridge for lunch the following day; it tasted just as delicious once heated up!
